Domaine du Hout Bourg with Nicholas Choblet

FishWorks celebrates the freshest, seasonal seafood. By working closely with our suppliers we ensure our seafood is honestly and sustainably harvested. The same rule is applied to the wine. Our wines are carefully selected to complement the freshest seafood. We work with family owned wineries, producing high quality wines in small quantities aiming for something really special.

Our visit to Domaine du haut Bourg was an exceptional experience. We began our journey by visiting the flat lake of the Grands Lieu – a great natural reserve. The Domaine du Haut Bourg has been built by four generations of winegrowers and at the moment they have eight varieties of the grapes – for both white and red wines.

The Choblets cellar is in the town centre. The Domaine du Haut Bourg master the whole vinification process – from making, filtering, to bottling and packaging the wines. We also saw FishWorks labelled boxes – all ready for their journey and distribution to our restaurants and even got to try the wine which is still in the production process and will reach our restaurants later in the year.

Dinner – which was huge fresh seafood platters consisting of mussels, langoustines, crevettes, oysters – was served with what we decided to be our favourite wine – Sauvignon Blanc 2012. Our long lasting relationship with the winemaker has lead us to endorse and recommend this stunning wine to our customers and we are proud to present each bottle with an ‘endorsed & recommended’ FishWorks label.
