Ingredients for Crisp Fried Marinated Whitebait

200g whitebait per person
Salt
Pepper
Plain flour
150ml Cider vinegar
1tbsp caster sugar
2 onions, thinly sliced
1 small carrot, finely chopped
2 cloves of garlic, chopped
? stick of celery, finely chopped
Olive oil
1 bay leaf
Flat leaf parsley, good handful, finely chopped

Crisp Fried Marinated Whitebait

Dredge the whitebait in seasoned flour and deep fry for 3-4 minutes until crisp. Drain and set aside. Gently warm the vinegar and sugar until the sugar has dissolved and the mixture is slightly sweet, then leave to cool.

Gently fry the onions, carrot, garlic and celery in a little olive oil. Add the vinegar and sugar mix an the bay leaf and continue to cook for 2-3 minutes, then set aside to cool. Add plenty of chopped parsley. Arrange the whitebait in a serving dish in a thin layer and spoon the marinade over the top. Finish with crunchy sea salt and plenty of freshly ground black pepper.
