Ingredients for Soused sprats

1kg sprats
1 onion, sliced
2-3 bay leaves
Sprinkle of grated nutmeg
Sprinkle of grated mace
A few peppercorns
A pinch of salt
15g butter
White wine vinegar
Handful of parsley, chopped

Soused sprats

Put the sprats in a saucepan with the onion, bay leaves, nutmeg, mace, peppercorns, salt and butter. Cover with a liquid made up of half white wine vinegar and half water. Bring to the boil and simmer for 20 minutes. Allow to cool. When cool stir in some parsley and serve.
