Ingredients for Roasted Salmon

Serves 4
Handful of pumpkin seeds
1 tsp sesame seeds
? tsp cumin seeds
4 roasted tomatoes
6 tbsp cider vinegar
Handful of fresh coriander
Juice of 1 lime
3 whole hot chillies, seeds removed
1 tbsp dried oregano
4 cloves of garlic
4 pieces of salmon fillet weighing about 150g each

Roasted Salmon

Make a salsa by toasting the seeds until golden in a heavy based frying pan. Add to a food processor and then pile in all the other ingredients except the salmon. Whiz, making sure that you don't overdo it - you need a roughly chopped feel.

Sear the salmon in a hot pan until golden and then finish cooking in a hot oven for a further 4-5 minutes until just pink on the inside. Serve with a spoonful of the sauce, a wedge of lime and a sprig of coriander.
