Ingredients for Grey mullet stuffed

150g Nicolino cheese or Feta
2 cloves of garlic
4-5 walnuts
A slice of stale bread
A few tbsps of olive oil
A small handful of parsley
A small handful of mint, finely chopped
1 grey mullet, weighing about 600g, scaled, gutted, the back bone removed from the inside - get your fishmonger to do this for you (you will still have a whole fish but no bones and an empty cavity for stuffing)
1 extra garlic clove, sliced

Grey mullet stuffed

Place all the ingredients, except the fish and the extra sliced garlic clove, in a food processor and whiz until you have a fine crumb. Moisten with olive oil.
Open out the fish and season with salt and pepper. Place the stuffing inside, put the fish in a roasting tray, pour over some olive oil, put some sliced garlic around the fish and then roast in the middle of a hot oven for 8-10 minutes.
