Equipment
I'd recommend all would-be fish cooks to invest in these basic, essential bits of kit:
• global cook's knife - sharp!
• hand-held food processor with attachments
• non-stick frying pan
• copper sauté pan with high sides for cooking and serving stews
• flat metal roasting trays - great for popping under the grill
• a good fish slice with a short handle
• palette knife - for turning fish fillets and scallops
• big pan with a lid for steaming shellfish
• oyster knife - pointed one preferably
• tongs
• a barbecue - for outside the kitchen door!
• small plastic bottles for oils or dressing, with pointed pouring spouts that can be cut to regulate flow
