Most fish are available throughout the year but are caught in varying quantities. When the fish are spawning (laying eggs) the quality of their meat is softer and not quite as good as when they aren't spawning. So it's the non-spawning season when species are at their best.

We'd also like the fish to breed to improve stocks, so it's best to avoid them when not indicated at their best in our seasonal calendar. The fishermen won't be targeting spawning species as they fetch less money at the morning auctions, so all round it's a seriously good thing to be eating fish when it's in season.
